Experts have confirmed that cold boiled potatoes are great for a healthy gut thanks to their resistant starch. Maz Packham, a nutritionist and the founder of Nourishful Nutrition, highlights how this starch promotes healthy intestines, improves digestion, helps with nutrient absorption and boosts the immune system. This resistant starch passes through the small intestine intact and reaches the colon, where good bacteria use it to bring nutritional benefits.
During cooking, resistant starch is converted into digestible starch, which is turned into glucose and absorbed by the body. However, by cooling down cooked potatoes, the starch returns to its resistant state thanks to a process known as retrogradation. When it reaches the large intestine, this resistant starch ferments, stimulating the growth of good bacteria and acting as a prebiotic to nourish the bacteria already there.
Resistant starch also offers many benefits: it produces gas and fatty acids during digestion, which are essential for the energy of colon cells. A healthy colon improves digestion and can reduce the risk of bowel cancer, the fourth most common cause of death from cancer worldwide.
