From the winter menu of @uno.spicchio.di.melone comes this delicious, healthy recipe to get back in shape after the holidays. The soft texture of our Colomba variety potatoes gives the dish a velvety touch.
Ingredients for 3-4 people
Mixed pulses, 280 g
Colomba variety potatoes, 3
Carrots, 2
Black kale, 2 leaves
Baby spinach, 100 g
Salt, to taste
Extra virgin olive oil, to taste
Pepper, to taste
Preparation
After soaking the pulses for at least 12 hours in plenty of water, drain them and put them in a saucepan.
Peel, wash and dice the potatoes and other vegetables and add them to the pulses, then cover everything with cold water.
Bring it to the boil and keep cooking over a moderate heat for at least an hour, gradually checking the texture of the pulses until they are how you want them. Add some salt to taste five minutes before turning off the hob. For an extra creamy result, you can blend part of the soup with a hand-held blender. Serve the dish piping hot, finishing it with extra virgin olive oil and pepper to taste.
