With its delicateness and flavour, this Portuguese-style salted cod with peppers and èVita Residue-Free Twister potatoes is a fish recipe that is sure to be a hit!
Ingredients for 4 people
Salted cod (or Baccalà), 800g
Twister potatoes, 400g
Mixed peppers, 200g
Yellow onion, 2
White wine, to taste
Extra virgin olive oil, as required
Table salt, to taste
Black pepper, to taste
Preparation
Rinse the desalted cod under running water. Thoroughly wash the potatoes and boil them in plenty of salted water for about 10 minutes, or until they have softened slightly. In the meantime, boil the cod too in unsalted water for about 10 minutes. Drain it and leave it to cool down, then remove the skin and bones and cut it into large pieces. When the potatoes are ready, drain them and leave them to cool down.
Wash and clean the peppers, removing the stalk, seeds and inner fibre, then cut them into strips. Clean and chop the onion into round slices. Place the peppers, onions and salted cod on a large baking tray, adding the sliced potatoes into the empty spaces. Season with extra virgin olive oil, salt and pepper, cover with a sheet of baking paper and cook in a preheated oven at 200°C for about 20 minutes. Remove the baking paper, simmer with a glass of white wine and keep cooking without the lid on so the liquid is reduced. Once ready, take it out of the oven and serve hot or warm to stop it from drying out too much.
