A triumph of flavors, the Pantelleria salad with mackerel fillets, tomatoes and èVita Residue-Free Twister potatoes is a Mediterranean main course!
Ingredients for 4 people
Twister potatoes, 400g
Mackerel in oil, 400g
Baby tomatoes, 300g
Black olives, 100g
Red onion, 1
Black olives, 100g
Salted Pantelleria capers, to taste
Oregano, to taste
Table salt, to taste
Extra virgin olive oil, as required
Preparation
Thoroughly wash the potatoes, peel them and boil them in plenty of boiling water for about 25-30 minutes, or until they are soft enough. In the meantime, thoroughly wash the baby tomatoes and cut them into quarters. Clean the onion, cut it in half and then slice it into round slices.
When they are ready, drain the potatoes and, once they have cooled down, cut them into pieces and put them in an ovenproof dish. Now add the baby tomatoes, round slices of onion, olives and a tablespoon of desalted capers as well as the mackerel drained from the oil. Season the salad with oil, oregano and salt.
