A real summer dish, this èVita Residue-Free Levante potato salad with radishes, mixed baby tomatoes and olives is a light and healthy recipe!
Ingredients for 4 people
Levante potatoes, 400g
Radishes, 100g
Curly endive, 100g
Mixed baby tomatoes, 200g
Pitted black olives, 50g
Extra virgin olive oil, as required
Table salt, to taste
Black pepper, to taste
Preparation
Thoroughly wash the potatoes, peel them and boil them in plenty of boiling water for about 25-30 minutes, or until they are soft enough. In the meantime, thoroughly wash the radishes and cut them into round slices. Wash the baby tomatoes too and cut them in half. When they are ready, drain the potatoes and, once they have cooled down, cut them into pieces. Put the vegetables and potatoes to one side.
Take a large bowl and put the potatoes in. Add the curly endive, round slices of radishes, black olives and baby tomatoes, season with extra virgin olive oil, salt and pepper and then stir everything together well.
