Ingredients for 3 nests
Levante potatoes, 2
Grated Parmigiano Reggiano, 4 tablespoons
Whole milk, 4 tablespoons
Salt, 1/2 teaspoon
Pepper, 1/2 teaspoon
Extra virgin olive oil, 1 tablespoon
Eggs, 3
Chives, to taste
Preparation
After you have washed and peeled them, boil the potatoes and mash them with a potato masher. Add the other ingredients to the mash, except for the eggs. Mix well until you get a compact, smooth mixture. Create a ‘nest’ shape and then place them on a baking tray lined with lightly oiled baking paper. Bake at 200°C for about 15 minutes, then pour the egg into the hollow part and leave them to cook for another 3/7 minutes, depending on the desired texture.
Serve hot with chopped chives.
