Have you ever thought about making toast without using bread? We have replaced it in this recipe with slices of sweet potato. Rich in fibre, vitamins and minerals, sweet potatoes are great for making both sweet and savoury dishes. Let’s discover how to use them to make toast with avocado and eggs.
Ingredients for 4 people
Sweet potatoes, 2 large
Avocados, 2
Eggs, 4
Chives, ½ tablespoon
Chia seeds, 1 teaspoon
Extra virgin olive oil, to taste
Salt, to taste
Preparation
Carefully wash the potatoes, peel them and cut them into slices about 1 cm thick. Cook them on a griddle pan over a low heat. When they are soft, put them on a serving dish and leave them to cool.
Peel the avocados and cut one of them into slices about a few mm thick. Make a creamy sauce with the flesh of the other avocado using a hand-held blender (alternatively, you can squash the flesh with a fork), add the chives, a pinch of salt, a drizzle of extra virgin olive oil and mix well.
Make the hard-boiled eggs: put them in a large saucepan, pour in enough cold water to cover them, put the saucepan on the hob and bring it to the boil. Once boiling, cook the eggs for about 9 minutes. Once this time is up, pass the saucepan under running fresh water so the eggs cool down properly, then peel them and slice them.
Pour a drizzle of extra virgin olive oil over the sweet potatoes, season with salt, put the creamy sauce on top and then do the same with the slices of avocado. Finally, add the eggs and decorate with the chia seeds.
