The result is a rich, natural and tasty dish: every bite is a burst of flavours, perfect for sharing with the family or surprising guests with the authenticity of a recipe that combines simplicity and tradition.

Ingredients (serves 4)
- 750 g of èVita Armonia Gourmet potatoes, cut into cubes
- 320–350 g mixed pasta (tubetti, ditalini or conchiglie)
- 180–200 g smoked provola cheese, grated
- 1 carrot, 1 stalk of celery, 1 onion (finely chopped for the soffritto)
- 1 tablespoon of tomato paste or, if in season, a few fresh cherry tomatoes
- A rind of Parmigiano Reggiano cheese (optional, to add a savoury note during cooking)
- Extra virgin olive oil, salt and pepper to taste
- A sprig of rosemary (optional, for flavouring)
Procedure
- Heat a little oil in a large pot and brown the celery, carrot and onion until they become golden and fragrant.
- Add the diced èVita Armonia Gourmet potatoes and brown for a few minutes, stirring gently.
- If you desire, add the Parmigiano Reggiano rind: it will release the flavour during cooking.
- Pour in hot water until it just covers the potatoes, add the tomato paste – or fresh cherry tomatoes – and bring to the boil. Add rosemary if you want a deeper flavour.
- When the potatoes begin to soften, add the pasta and cook, stirring frequently; add hot water if necessary, until the mixture is creamy.
- Turn off the heat, immediately stir in the grated smoked provola cheese, stirring vigorously until it becomes stringy and the consistency is soft and creamy.
- Season with salt and pepper, stir again and serve immediately, preferably nice and hot.
