Want a rich and indulgent dish to enjoy the height of summer with? Gnocchi with prawns and creamy fresh cheese: this recipe may be quick and simple to prepare, but it will get you licking your lips!
Ingredients for 4 people
Potato gnocchi, 360 g
Prawns, 400 g
Fresh cheese, 150 g
Leeks, as needed
Parsley, a couple of sprigs
Extra-virgin olive oil, as needed
Salt, as needed
Preparation
Finely cut the leeks and then fry them on a low heat with a drizzle of extra-virgin olive oil. Whilst the leeks are slowly cooking, put the prawns in boiling water for 5 minutes, drain them, leave them to cool down, and then remove their shells. Add them to the leeks and cook them for another 5 minutes. Before turning off the heat, sauté them on a high heat.
Whilst the prawns are still hot, add the soft cheese into the same saucepan and mix together until the cheese has completed melted and mixed in with the prawns.
In another saucepan, cook the potato gnocchi in lightly salted water, drain them, and then pour them into the sauce. Sauté everything on a low heat for about a minute so that the cheese becomes even creamier and completely covers the gnocchi. Dish it out onto some plates, sprinkle some chopped parsley on top, and then serve.
