Ingredients for 40 biscuits
Potatoes, 500 g
Sugar, 100 g
Butter, 50 g
Eggs, 2
Lemon, 1
Cocoa powder, 100 g
Chocolate shavings, 50 g
Preparation
Wash the potatoes carefully, peel them, and then boil them in plenty of lightly salted water for 30 minutes. Use a potato masher to mash them and then leave it to cool down. Melt the butter in a bain-marie and then slowly pour it onto the mashed potato. Add the eggs, sugar, and some lemon peel. Use a wooden spoon to mix the ingredients well until you get a smooth mixture. Sieve the cocoa powder and add it to the mixture. This should become quite thick, but liquid enough for it to be arranged onto a baking tray through a piping bag. If its consistency is too liquid, add a few spoonfuls of 00-grade flour. Butter a baking tray, pour the mixture into a piping bag, and then distribute it onto the baking tray in whichever shape you like. Finally, sprinkle some chocolate shavings on top of the biscuits.
