Why autumn flavours pair so well with potatoes

Autumn brings intense and very different flavours to the table: the sweetness of pumpkin and chestnuts, the bitterness of radicchio, the earthy notes of mushrooms, the savoury flavour of aged cheeses and cured meats, the crunch of nuts and seeds, and the sweet-and-sour contrasts of fruit and mostarda. It is this variety of sensations that makes autumn cooking so rich, with potatoes naturally finding their place in it.

Their delicate flavour allows them to be paired with more intense ingredients without overpowering them, while their texture can change completely depending on how they are cooked: soft and creamy, dry, crisp or golden. It is precisely this versatility that makes potatoes an ideal base for playing with different contrasts and textures.

Let’s start with sweetness, one of the most distinctive characteristics of autumn cuisine. Pumpkin, chestnuts and onions can be paired with potatoes in soft and comforting dishes, such as a potato and pumpkin velouté, where the sweetness of the ingredients is balanced by the delicate flavour of the potatoes. But the same contrast can take centre stage in a more rustic dish, such as crushed potatoes with chestnuts and rosemary.

Bitterness, on the other hand, introduces a more pronounced note, creating a pleasant counterpoint. Radicchio, chicory and other autumn vegetables with a slightly bitter flavour can be paired with potatoes in many different preparations: for example, potato gnocchi with radicchio and cheese, where the bitterness of the vegetable meets the softness of the dough, or a warm potato and radicchio salad prepared with èVita Residuo Zero, in which the contrast is made even more pronounced by a slightly acidic dressing.

Savouriness offers another way to create balance. Aged cheeses, speck and pancetta can add character even to very simple dishes, such as oven-baked potatoes with speck and cheese prepared with èVita Armonia Gourmet, where the golden surface adds a toasted, crispy note. Alternatively, you can play with the contrast between softness and crunch with a potato filled with aged cheese and crispy pancetta.

Earthy notes, on the other hand, evoke the atmosphere of the forest floor. Mushrooms and truffles add depth and intensity, while potatoes complement their flavours without overpowering them. One example is potato gnocchi with mushrooms and thyme prepared with èVita Patata di Campo, but even a simple potato cream enriched with sautéed mushrooms can create an interesting interplay between softness and intensity.

And crunch itself can take centre stage, especially when paired with a soft preparation. Walnuts, hazelnuts and toasted seeds add a completely different texture to a velouté or potato cream, transforming a simple dish into something more complex. Potatoes themselves can also provide this contrast: for example, a smooth potato cream topped with crispy potato chips combines the softness and crunch of the same ingredient.

Finally, sweet-and-sour flavours introduce an even more complex combination of sensations. Apples, pears, mostarda and caramelised onions can be paired with potatoes to create a balance between sweetness, acidity and savouriness. One example? Roasted potatoes served with caramelised onions and a few slices of apple, where the crispy, savoury character of the potatoes meets the freshness and sweetness of the fruit.

It is precisely their versatility that makes potatoes so well suited to autumn cooking: a delicate base that can take on different textures and enhance ingredients with a wide range of characteristics. Not simply a side dish, therefore, but an ingredient that can be used to experiment with new balances and bring the full richness of the season to the table.
