Italy is renowned for its vast wealth of gastronomical treasures, which is revered around the world. But alongside the most famous productions, there are less-known products that are equally representative of wonderful local traditions.
With our “Potatoes of Italy” project, we hope to contribute to the process of discovering, protecting and promoting the diverse heritage of quality Italian potatoes.
For this reason, we have mapped the main niche varieties of potatoes, usually grown in mountainous or hilly areas, and have examined their importance within the local cuisine of the respective regions. From Piedmont to Sicily, from Lombardy to Calabria, our journey took us up and down the Boot to discover 11 traditional varieties that give lustre to the potato industry.
