It has an even shape and size, a high dry matter content (20-21%), a high yield (52-55 tonnes per hectare) and an excellent shelf life. These are the characteristics of the Constance potato, a large variety with mid-to-early growth, a light yellow flesh and a bright yellow peel. Thanks to their hardiness, Constance potatoes keep a light, smooth peel even with late harvests and are suitable for all culinary uses.
