Light and colourful, this mixed salad with baby tomatoes, cucumbers, red onion, black olives and Arizona new potatoes is perfect for lunch or a quick dinner!
Ingredients for 4 people
Arizona new potatoes, 400g
Romaine lettuce, 200g
Tropea red onion, 100g
Black olives, 50g
Baby tomatoes, 200g
Cucumber, 200g
Parsley, to taste
Extra virgin olive oil, as required
Table salt, to taste
Preparation
Thoroughly wash the potatoes and boil them without peeling them in plenty of boiling water for about 25-30 minutes, or until they are soft enough. In the meantime, clean and slice the red onion and cucumbers. Wash the lettuce leaves well and dry them, then cut the baby tomatoes into quarters. Put the lettuce, onion, baby tomatoes, cucumbers and olives into a salad bowl and season with extra virgin olive oil and salt to taste. The potatoes will now be ready, so drain them and leave them to cool down, then cut them in half. Add the potatoes to the rest of the ingredients and another drizzle of oil if you like. Stir well to let the flavours develop and decorate with a few leaves of parsley.
