A festive starter, this Russian salad made with èVita Residue-Free potatoes using the Twister variety, grown by minimising any chemical treatments, is a must for Christmas!
Ingredients for 4 people
èVita Residue-Free Twister potatoes, 500g
Peas, 250g
Carrots, 250g
Pickles, 30g
Egg yolks, 2
Sunflower oil, 200ml
Lemon juice, 25ml
White wine vinegar, 10ml
Table salt, to taste
Black pepper, to taste
Preparation
Thoroughly wash the potatoes, peel them and boil them in plenty of boiling water for about 25-30 minutes, or until they are soft enough. In the meantime, pour the egg yolks into a bowl with the vinegar, salt and black pepper, then beat the mixture while drizzling in the sunflower oil. Once everything is mixed together, add the lemon juice and mix well. Cover your mayonnaise with cling film and put it in the fridge.
Peel the carrots and boil them as well in boiling water for about 10 minutes, but they should stay slightly crunchy. Meanwhile, dice the pickles and put them into a bowl. Once ready, do the same thing with the potatoes and carrots as well. Next, quickly blanch the peas and add them to the rest. Stir and leave it to cool down, then put it in the fridge for 15 minutes. Once the time required is up, pour in the mayonnaise and stir everything until it is mixed together enough, then serve your Russian salad!
