A classic that never lets you down, this roast chicken with Ready to Eat Mini èVita Potatoes, fully cooked and ready in a few minutes, is the most popular main course among Italians!
Ingredients for 4 people
Whole chicken, 1kg
Ready to Eat Mini èVita Potatoes, 450g
Garlic, 2 cloves
Sea salt, to taste
Sage, to taste
Rosemary, to taste
Extra virgin olive oil, as required
Preparation
Start by tying up the chicken so that it keeps its shape during and after cooking. Put 2 peeled cloves of garlic into a mixer along with the sea salt, sage and rosemary, then blend and pour everything into an appropriate container.
Put the chicken into an ovenproof dish and massage extra virgin olive oil all over its surface. Sprinkle it with the aromatic mix and keep massaging it well to ensure that it sticks better. Season the inside of the chicken with the mix as well.
Roast the chicken in a preheated conventional oven at 180-200°C for about an hour. To keep the meat juicy, baste it with the cooking juices from time to time. About 30 minutes from the end, turn the chicken around and spread the Ready to Eat Mini èVita Potatoes around it, coating them with a little of the juices. Once cooked, take it out of the oven and serve your roast chicken with potatoes.
