This incredibly simple yet delicious snack is so quick to make: potato tarallucci breadstick rings are perfect for an outdoor snack or for aperitifs… You won’t be able to stop at just one.
Ingredients for 4 people
White potatoes, 150 g
Ultra-fine “00” flour, 200 g
Oregano, 1 teaspoon
Extra virgin olive oil, 120 ml
Salt, to taste
Preparation
Carefully wash the potatoes, peel them and dice them. Boil them in salted water for about 5-10 minutes. When they are soft, drain them and mash them. Add the flour a little at a time, then add a pinch of salt and the oregano (alternatively, you can use rosemary). Work the ingredients with your hands and pour in the extra virgin olive oil, then keep kneading vigorously until you get a compact ball of dough. Adjust with water or flour if necessary so the dough is easy to work with your hands, but not too hard. If you want your tarallucci to be softer, you can add half a sachet of instant baking powder for savoury dishes.
Now start making the tarallucci. Take small portions of the dough and work them to make cylinders about 1 cm in diameter, then fold one end over the other to form a little ring shape. Place them on a sheet of baking paper and bake in a conventional oven at 180°C for 15 minutes. Take them out of the oven and leave them to cool down.
