Whether as a main or one-course meal, potato and broccoli flan is a simple dish to make, made even more mouthwatering by two layers of delicious stringy cheese. You can make this recipe by mixing your favourite vegetables, just use a little imagination!
Ingredients for 4 people
White potatoes, 500 g
Broccoli, 500 g
Eggs, 1
Sliced stringy cheese, 100 g
Grated cheese, 100 g
Breadcrumbs, 2 tablespoons
Butter, 10 g
Salt, to taste
Pepper, to taste
Preparation
Wash the potatoes thoroughly, peel them and cut them in half and then boil them in salted water for about twenty minutes. Check that they are soft enough by using a fork. Wash the broccoli, separate the florets and steam them or boil them in salted water for 10-15 minutes. Once cooked, put the potatoes in a fairly large bowl and mash them very roughly with a fork. Add the broccoli and, if any of the florets are too big, make them smaller with a fork. Add the beaten egg, the grated cheese, a pinch of salt, some pepper and then mix together thoroughly.
Grease an ovenproof dish and sprinkle it with breadcrumbs to stop the flan from sticking to the baking tray. Put half the mixture into the dish, creating an even layer, and then put slices of stringy cheese on top. Pour in the second half of the mixture, spreading it evenly, and finish with a final layer of stringy cheese. Bake at 200°C for 15 minutes, take it out of the oven and then serve.
