Potato salad with tzatziki sauce is a typical dish of Greek cuisine. Fresh, light, nourishing and, above all, delicious: a perfect choice for a hot summer day.
Ingredients for 4 people
Potatoes, 500 g
Greek yoghurt, 300 g
Cucumbers, 2
Garlic, 2 cloves
Extra virgin olive oil, 2 table spoons
White wine vinegar, 1 table spoon
Preparation
Boil the potatoes in plenty of salted water for 30 minutes. Drain, peel and dice the potatoes (not too small). Separately, prepare the tzatziki sauce. Start by cutting off the tips of the cucumbers, then grate them and leave them to drain in a colander for about an hour. In the meanwhile, use a blender or mortar to finely mince the garlic. Pour the yoghurt into a bowl, add the oil, the cucumbers, a table spoon of white wine vinegar and a bit of salt. Mix it using a whisk and let it sit for about half an hour, so the yoghurt absorbs the flavour.
Add the diced potatoes and stir well, so that the sauce fully coats all of the potatoes. Leave the dish in the refrigerator for a couple of hours, then enjoy your Greek feast!
