A stringy, delicious comfort food, this èVita Armonia Gourmet Melrose potato parmigiana is a complete, balanced one-course meal to be enjoyed with a nice glass of wine!
Ingredients for 4 people
èVita Armonia Gourmet Melrose potatoes, 1kg
Smoked provola cheese, 350g
Béchamel sauce, 500ml
Cooked ham, 150g
Grated Parmigiano Reggiano, 80g
Table salt, to taste
Black pepper, to taste
Preparation
Thoroughly wash the potatoes, peel them and boil them in plenty of boiling water for about 5-10 minutes, or until they have softened slightly. Once the time required is up, drain them and, once cool, cut them into slices about half a centimetre thick.
Cut the provola cheese into thick slices too. Take a round (or rectangular) ovenproof dish and spread a little béchamel sauce on the bottom using the back of a tablespoon. Create a first layer with the potatoes, covering all the surface well, then add the provola cheese and season with salt and pepper. Add half the cooked ham too and another layer of béchamel sauce.
Sprinkle with parmigiano and make another layer of potatoes, season with salt and pepper, then add the remaining slices of provola. Put on some more cooked ham, béchamel sauce and parmigiano, then a final layer of potatoes. Cover with an even layer of béchamel sauce and finish with grated parmigiano.
Cook in a pre-heated oven at 180°C for about 30 minutes, or in a fan oven at 170°C for the same amount of time. Finish by browning it for a few minutes under the grill. Once the time required is up, check it is cooked with a cocktail stick: if it slides in easily, your potato parmigiana is ready.
