Crispy and delicious, these fried èVita Armonia Gourmet Melrose potato bites, served with a tasty spicy sauce, are the perfect snack!
Ingredients for 4 people
Armonia Gourmet Melrose potatoes, 1kg
Ultra-fine “00” flour, 250g
Cold sparkling water, 300ml
Smoked paprika powder, 1 teaspoon
Sunflower oil, 1l
Spicy sauce, to taste
Table salt, to taste
Black pepper, to taste
Preparation
Wash the potatoes thoroughly, then peel them and cut them into large pieces. Put the potatoes in a bowl and leave them in water for about an hour so they lose some of their starch and you get a crispier result.
In the meantime, prepare the batter by putting the flour in a bowl and drizzling in the sparkling water. Add salt and pepper to taste and mix with a whisk to stop lumps from forming. When you get a soft, even batter, add the smoked paprika.
Once the time required is up, put a saucepan on the hob with the sunflower oil and, as soon as it reaches a temperature of 185°C, dip the potatoes in the batter and then in the boiling oil, one at a time. When they rise to the surface, leave them to cook for about 5 minutes until the batter is sufficiently golden brown.
Drain your potato bites onto paper towel and serve them while still hot together with the spicy sauce.
