Soft and rich, this mashed potato made with Melrose èVita – Armonia Gourmet potatoes, with its pink skin and orangey-yellow flesh, as well as crispy bacon, is a simple yet delicious side dish!
Ingredients for 4 people
Armonia Gourmet Melrose potatoes, 1kg
Whole milk, 250 ml
Guanciale, 100g
Butter, 50g
Nutmeg, to taste
Table salt, to taste
Preparation
Thoroughly wash the potatoes, peel them and boil them in plenty of boiling water for about 25-30 minutes, or until they are soft enough. Once they are cooked to the desired level, drain the potatoes and mash them with a potato masher in a bowl, then leave them to cool down.
In the meantime, remove the rind from the guanciale cured pork and cut it first into slices and then into thin strips. Now put the guanciale into a non-stick pan and brown it for about ten minutes over a medium-high heat, until it turns crispy enough.
Pour the warm milk a little at a time into the bowl with the potatoes, while stirring at the same time with a whisk to stop lumps from forming. Cook the mash over a very low heat for 3-4 minutes, until it is softer, then add the diced butter, table salt and nutmeg to taste, finally add the crispy guanciale and stir quickly to mix the ingredients together. Serve the mashed potato while still hot.
