If you suddenly feel like pizza, but don’t have much time to make it, you can make a crispy and versatile version in just 30 minutes by cooking it in a pan.
The recipe we are offering here isn’t trying to replace the classic Neapolitan pizza, but rather serves as a delicious alternative.
Ingredients for 1 pizza
Ultra-fine flour (“00” type), 150 g
Yellow potatoes, 150 g
Mozzarella, 100 g
Room-temperature water, 90 ml
Instant baking powder for savoury dishes, 5 g
Rosemary, a few leaves
Extra virgin olive oil, 4 tablespoons
Salt, one pinch
Preparation
Combine the flour, baking powder and water in a fairly large bowl. Knead it vigorously and add the salt and extra virgin olive oil, keep working the ingredients until you get a soft, compact ball of dough. Using a flour-coated rolling pin, roll out the dough on a pastry board and make a disc about 1 cm thick.
Meanwhile, wash, peel and cut the potatoes into thin slices. Season them with oil, salt and a few leaves of rosemary, then bake at 200°C for 15 minutes and take them out of the oven.
Grease a non-stick pan with a drizzle of extra virgin olive oil, heat it up and put the dough in. Put the mozzarella, the potatoes and a tablespoon of oil on the pizza base. Cover it and cook it over a low heat for about 15 minutes. When the edge turns golden brown, turn off the heat and serve.
