Combine eggs, potatoes and onions, and bang – you’ve got yourself an omelette! This dish is great for any season and occasion. You can easily add your own touch to it, and it is also delicious cold.
In this version, we have used just a few authentic ingredients, which are easy to find in your kitchen cupboards, but you can enrich the recipe if you like by adding cheese, cured meats or other herbs.
Ingredients for 4 people
Yellow potatoes, 400 g
Eggs, 4
Grated cheese, 40 g
Onions, 150 g
Fresh rosemary, 2 sprigs
Extra virgin olive oil, 5 tablespoons
Salt, a pinch
Pepper, to taste
Nutmeg, to taste
Preparation
Start by preparing the potatoes. Wash them, peel them, dice them and cook them in boiling salted water for 5-10 minutes (depending on the size of the pieces). When they are slightly softer but not completely cooked, drain them and leave them to cool down.
In the meantime, beat the eggs together with the other ingredients in a bowl: the grated cheese, a sprig of finely chopped fresh rosemary, and a pinch of salt, pepper and nutmeg. Finally, add the potatoes and mix everything together.
Finely chop the onion and sweat it in a non-stick pan with a drizzle of extra virgin olive oil (alternatively, you can use a clove of garlic if you prefer). When the onion is golden brown, pour in the egg and potato mixture and leave it to cook over a low heat with the lid on for 5-10 minutes. Flip the omelette over onto a plate or use the lid and slide it into a pan to turn the other side golden brown as well for 3-4 minutes. Plate up, decorate with the other sprig of fresh rosemary and then serve.
