Nature is coming back out of hibernation, the days are getting longer, and the land is bearing fruits once again: Spring is finally here, accompanied by the first fruit and veg of this delicious season. Let’s take a look at some of them.
Asparagus. Although it’s great for putting in risottos, frittatas, and pasta dishes, it is also delicious served on its own as a seasonal side dish together with meat and fish. There are various types of asparagus, such as the highly regarded white variety, which has a particularly delicate flavour.
Radishes. These can be grown from the beginning of the spring until to November. It is the root that people know and enjoy from this plant, whose red skin and strong flavour is perfect for preparing amazing salads.
Dandelion. Just as versatile as it is unusual, dandelion is used in many recipes, ranging from pasta dishes to desserts, thanks to its slightly spicy and bitter flavour. The roots of the plant can be breaded and fried, whereas the leaves can be boiled and then seasoned as you like, or sautéed in a frying pan with a drizzle of oil and a little bit of water.
Spinach. The warmth of the sun during springtime helps to increase the levels of precious antioxidants found in spinach. Eaten both raw and cooked, spinach is a very versatile ingredient that can be used in pasta dishes, salads, and tasty side dishes (find out here how to make spinach balls).
New potatoes. New potatoes are the kings of mealtime during spring, with their delicate flavour and fine, nutrient-rich skins, which don’t have to be peeled off before cooking. They should be cooked in the oven or in a frying pan, and seasoned with oil, salt, rosemary, or another aromatic herb of your choice.
Moving on to fruit, oranges, mandarins, pears, apples, and kiwis, which are also available during the winter months, are already being accompanied by a number of early-season fruits that are typical of the warmer months, such as strawberries, one of the most popular springtime fruits. As they are extremely filling and have a low-calorie content, they are perfect for making a healthy snack.
