If you’re thinking about throwing away those squishy bananas that have been lying in your fruit bowl for a few weeks now, then hold on a second! They will be the perfect ingredient for a truly delicious #Zerowaste banana bread, offered here today in a vegan version :)
Ingredients for one loaf tin:
3 overripe bananas
220 g of rice flour or oatmeal
120 g of sugar
100 ml of soya milk (or your choice of plant milk)
16 g of baking powder
1 teaspoon of cinnamon
1/2 teaspoon of salt
Chocolate chips and walnuts (optional)
Preparation
Take a bowl and put in the pieces of banana, the soya milk and the sugar. You can reduce the sugar a little if your bananas are very ripe and you want your banana bread to be less sweet.
Blend everything or mash the bananas with a fork and mix by hand, until the mixture has no lumps.
Add the salt, the cinnamon and pour in the flour a little at a time so it blends in with the mixture. Then add the baking powder and, if you want to make your sweet treat even more indulgent, some chocolate chips and walnuts.
Take the loaf tin, line it with baking paper and grease it with a drizzle of oil. Pour the mixture into the tin and bake it for about 50 minutes in a preheated oven at 170°C.
When your banana bread is nice and golden brown, you can serve it and enjoy this simple yet delicious sweet treat.
