This light, delicious and very simple recipe is just what you need after a late May afternoon. Today, we’ll show you how to make a fillet of sea bream with a healthy, nutrient-packed side dish: steamed èVita La Novella Siciliana potatoes to optimise their content of important vitamins and minerals, such as potassium and magnesium.
Small, incredibly tender and featuring thin skin and sweeter, more delicate flesh, new potatoes are the master stroke of this dish.
Ingredients (for 4 people):
4 sea bream fillets
800 g of èVita La Novella Siciliana potatoes
Salt
Spices (to taste)
Extra virgin olive oil

Preparation
Firstly, peel the potatoes, cut them into small pieces and leave them to soak for about half an hour. In the meantime, take a steamer, cover it with baking paper and make some small holes. Next, put in the potatoes, add some salt, cover and cook for 15 minutes. When they’re ready, transfer them into a bowl to one side and, if you like bolder flavours, sprinkle over a few spices - paprika, black pepper or rosemary for example.
Now it’s time for our fillets. Cover the steamer again with some more baking paper, dry the fillets and place them over the paper. Add some salt, cover and cook again for about 15 minutes. When the fish is cooked, put the potatoes on top for a few minutes, just to heat them up.If your sea bream fillets are frozen, remember to take them out of the freezer in good time.
Season everything with a drizzle of extra virgin olive oil and your dish is ready to eat. This balanced recipe rich in protein, vitamins and minerals will keep your body and palate happy!
