The recipe we offer here today involves crispy roast potatoes in chimichurri sauce, a delicious side dish that can add a wonderful kick to your dishes.
Ingredients (for 4 people)
1 kg of èVita “La Novella Siciliana” potatoes
2 cloves of garlic
Parsley
80 ml of olive oil
20 ml of vinegar
Paprika
Table salt
Breadcrumbs

Preparation
Start by peeling and cutting the potatoes into wedges. Our èVita “La Novella Siciliana” yellow potatoes are perfect for this recipe. Cook them in salted boiling water for a few minutes.
Meanwhile, finely chop the parsley and garlic and pour everything into a bowl. Add some olive oil, vinegar and paprika and stir well until you get an even mixture. This is our chimichurri sauce!
Drain the potatoes, put them in a bowl and pour over the sauce you’ve just made, stirring well so the condiment covers all the potatoes. Arrange the potatoes on a baking tray with some baking paper and sprinkle over some breadcrumbs. Bake them in a preheated fan oven at 180°C for 45 minutes. Voilà, they’re ready to eat!
