Ingredients (for 4 burgers):
300 g cooked chickpeas (homemade is best, but canned chickpeas are fine)
2 medium potatoes (about 300 g)
1 small onion, finely chopped
1 clove of garlic (optional)
2 tablespoons breadcrumbs (or chickpea flour for a gluten-free version)
1 teaspoon cumin (or sweet paprika, depending on your taste)
1 tablespoon extra-virgin olive oil
Salt and pepper to taste
Chopped fresh parsley (optional)
Sesame seeds for decoration (optional)
Preparation:
Boil the potatoes with their skins on in plenty of salted water until tender (about 20-25 minutes). Drain and let them cool, then peel and mash them with a potato masher or fork in a large bowl. If you use canned chickpeas, drain them and rinse well under water. Then, blend them briefly in a blender or mash them with a fork, leaving a few chunks for a more rustic texture.
In a skillet, lightly sauté the onion and garlic (if using) with a tablespoon of extra virgin olive oil for 5 minutes, until soft and translucent.
Add the chickpeas, sautéed onion, cumin, parsley, salt, and pepper to the bowl with the mashed potatoes. Mix everything together well. If the mixture is too wet, add a little bread crumbs for a firmer texture. With wet hands, take a portion of the mixture and shape it to form burgers. If you like, you can toss the burgers in sesame seeds for extra crunch. You can cook the burgers in a skillet with a drizzle of oil over medium heat for 4 to 5 minutes per side, until golden brown. Or, if you prefer a lighter version, bake them in the oven at 200°C for about 20 minutes, turning them halfway through cooking. Serve them hot, perhaps with a yogurt and lemon sauce, homemade ketchup, or inside a sandwich with lettuce, tomato, and onion!
