Ingredients
500 g sweet potatoes (or yellow potatoes èVita Residuo Zero)
150 g sugar
100 g melted butter
3 eggs
100 ml milk
150 g 00 flour
1 packet of baking powder (16 g)
1 teaspoon vanilla extract
Grated zest of 1 lemon
A pinch of salt
Icing sugar (for decoration)
Preparation
Boil the potatoes with their skins on in boiling water for about 30-35 minutes, until soft. Peel and mash them with a potato masher until smooth. In a large bowl, whisk the eggs with the sugar until light and fluffy. Add the melted butter, milk, and vanilla extract, mixing well.
Combine the mashed potatoes and mix everything together.
Sift the flour with the baking powder and a pinch of salt. Gradually incorporate it into the mixture, stirring until smooth. Add lemon zest for fragrance. Pour the mixture into a buttered and floured 22-cm cake pan. Bake in a static oven preheated to 180°C for about 40-45 minutes. Do the toothpick test: if it comes out clean, the cake is ready!
Allow it to cool completely and dust it with powdered sugar before serving. You can enrich the cake by adding chocolate chips or raisins to the dough.
