Perfect as a delicious starter or a flavour-packed side dish, these skewers combine the creaminess of potatoes with the crispiness and bold flavour of speck ham. Making them is a piece of cake and we can assure you that they will win everyone over at your dinner table!
Ingredients (for 4 people):
- 4 Armonia Gourmet Melrose potatoes
- 150 g of sliced speck ham
- 2 tablespoons of extra virgin olive oil
- 1 sprig of rosemary
- Salt and pepper to taste
- Wooden skewers
Preparation
Cook the potatoes: boil them whole with the skin on in salted water for about 15 minutes. They need to soften but stay firm. Drain them and leave them to cool down. Cut them into pieces. Once cool, peel and cut them into pieces of about 3 cm. Add the speck: wrap each piece of potato with a slice of speck and thread them onto the skewers, alternating them to create an eye-catching effect.
Add the seasoning: place the skewers on a baking tray lined with baking paper, brush them with a drizzle of oil and sprinkle them with chopped rosemary, salt and pepper.
Bake at 200°C for 15 minutes, until the speck turns crispy and the potatoes go lightly golden brown. Alternatively, you can cook them on the grill or in a pan for a few minutes for an even more rustic effect.
Serve them with a yoghurt sauce and herbs for a fresh, creamy contrast.
