This is the ideal recipe if you love potatoes as a side dish, with additional bold flavours such as spices and pancetta! Imagine potatoes golden brown on the outside and soft on the inside, enveloped by the aroma of Mediterranean herbs and decadent crispy pancetta.

Ingredients (for 4 people):
- 800 g of Armonia Gourmet Monique variety yellow potatoes
- 150 g of diced smoked pancetta
- 2 tablespoons of extra virgin olive oil
- 1 teaspoon of dried oregano
- 1 teaspoon of dried thyme
- ½ teaspoon of chopped rosemary
- ½ teaspoon of sweet paprika (or spicy paprika for a stronger touch!)
- Salt and pepper to taste
- 1 clove of garlic (optional, for an even more intense aroma)
Preparation:
Wash the potatoes well and, if you like, leave the skin on for a rustic effect. Cut them into wedges or cubes, trying to keep them all the same size so they cook evenly. In a large bowl, mix the potatoes with the extra virgin olive oil, oregano, thyme, rosemary and paprika. If you want a more intense flavour, add a crushed clove of garlic too. Mix well to spread the spices around evenly. Place the potatoes on a baking tray lined with baking paper, trying not to make them overlap too much. Cook in a preheated oven at 200°C for about 25 minutes, turning them halfway through cooking so they go golden brown on all sides. After 25 minutes, add the diced pancetta straight onto the potatoes and keep cooking for another 10-15 minutes, until the pancetta is crispy and the potatoes are nicely golden brown.
Take the potatoes out of the oven, season with salt and pepper, and serve them hot. You can garnish them with a sprinkling of fresh parsley or some grated pecorino cheese for an even more indulgent touch!
These potatoes are perfect with a meat main course, such as a roast or grilled ribs. If you prefer a vegetarian version, you can swap the pancetta for Taggiasca olives or dried baby tomatoes for an irresistible Mediterranean touch!
