If you’re looking for a mouth-watering yet unusual recipe, these Levante potato waffles are right up your street! Perfect for a savoury breakfast, a rich brunch or as an alternative side dish, these waffles will win everyone over with their soft centre and irresistibly crispy crust.
They’re so simple to make and we can assure you that once you’ve tried them, you can’t go back!
Ingredients for 4 waffles
- 400 g of potatoes (preferably with yellow flesh)
- 1 egg
- 50 g of grated parmesan
- 40 g of ultra-fine “00” flour
- 1 teaspoon of instant baking powder for savoury cakes
- 50 ml of milk
- 1 tablespoon of extra virgin olive oil
- Salt and pepper to taste
- Nutmeg to taste (optional)
- Herbs to taste (thyme, parsley or rosemary)
- Butter or oil for greasing the waffle iron
Preparation
Boil the potatoes with the skin on in plenty of salted water until they are soft (about 20 minutes). Drain them, leave them to cool down, then peel them and mash them with a potato masher. Put the mashed potatoes in a large bowl with the egg, parmesan, flour and baking powder. Add the milk and extra virgin olive oil, stirring well to get a smooth mixture. Season with salt, pepper, nutmeg and chopped herbs.
Preheat the waffle iron and lightly grease it with butter or oil. Pour a ladle of batter into the waffle iron and close it. Cook for about 5-6 minutes, or until the waffles are golden brown and crispy. Once ready, place the waffles on a plate and serve them hot. You can eat them on their own or served with sauces, cream cheese or cured meats for an even more indulgent touch! For an even more delicious version, you can add cubes of crispy pancetta or a little stringy cheese straight into the batter mix. Try them and let us know what you think!
