This is a less well-known (but equally delicious) version of potato salad. Here is how to make a perfect Haitian potato salad with our Colomba variety potatoes, with their soft yet compact texture when cut.
Ingredients for 2 people
Colomba potatoes, 4
Carrots, 1
Eggs, 2
Turnip, 1
Fresh peas, ½ cup
Onion, ½
Red and green peppers, ½
Mayonnaise, 2 tablespoons
Black pepper, to taste
Salt, to taste
Preparation
Boil the potatoes and the carrots in salted water until they are soft. Boil the beetroot as well separately, then peel it and cut it into small cubes. Boil the eggs and cut them finely after they have cooled down. Put everything in a large bowl together with the sweet peas, onion and thinly diced peppers and then mix with mayonnaise. Add salt and pepper to taste and then serve.
