Today’s zero-waste recipe is for making dry bread gnocchi. Making these delicious gnocchi is a good way to re-use any dry bread, seasoning them however you like. It’s a very old dish for using up leftovers, which lets you add flavour and a new look to a great traditional Italian dish, gnocchi!

Ingredients
250 g of dry bread
1/2 l of milk
2 eggs
200 g of flour
grated cheese
1 clove of garlic
2 sage leaves
nutmeg
50 g of butter
Salt
pepper
Preparation
Cut the bread into pieces that are not too large. Put a saucepan on the hob with the milk and, when it’s about to boil, add the salt and remove it from the hob. Put the bread in the milk, leave it to soften and then stir with a wooden ladle until you get a smooth mixture. Mix in the eggs and, while continuing to stir, add the flour a little at a time. Season with a pinch of nutmeg, salt and pepper. The mixture should be thick, like a purée. Cover and leave it to rest for two hours somewhere cool.
After resting, put a saucepan with plenty of water on the hob and, when it starts to boil, add some salt. Using a tablespoon, drop the dough into the water forming quenelles. Keep doing this until you have used up all the mixture. Cook the gnocchi for at least five minutes.
In the meantime, melt the butter in a small pan and brown the garlic and sage. Drain the gnocchi with a skimmer and season them with the flavoured butter, after removing the garlic. Sprinkle with grated cheese and serve right away.
