Here’s a simple yet delicious recipe for the #zerowaste column: dry bread cake, a traditional dessert perfect for preventing waste and enjoying an excellent pudding!
Ingredients
300 g of dry bread
500 ml of milk
100 g of sugar
2 eggs
50 g of melted butter
50 g of raisins (optional)
30 g of chopped walnuts or pine nuts (optional)
1 apple (optional, diced)
30 g of unsweetened cocoa powder (optional, for a more indulgent version)
1 sachet of vanilla flavouring or some grated lemon peel
1 teaspoon of cinnamon (optional)
Icing sugar for decorating
Preparation
Soak the bread: cut the dry bread into pieces and put it in a large bowl with the milk. Leave it to rest for at least 30 minutes, stirring every now and then until the bread has completely softened. Prepare the mixture: mash the bread with a fork until you get a smooth mixture. Add the eggs, sugar, melted butter and mix well. Add the extra ingredients: if you like, mix in the raisins (pre-soaked in water or rum), the pine nuts, diced apple, cocoa powder and spices. Bake the cake: pour the mixture into a greased and floured cake tin (22-24 cm in diameter) and even it out well. Bake in a preheated conventional oven at 180°C for about 40-50 minutes, until the surface is golden brown and the cake is compact. Leave it to cool down and sprinkle with icing sugar before serving.
It’s perfect served hot or cold, perhaps accompanied by a scoop of vanilla ice cream!
