Here is a recipe for how to make delicious puff pastry roses with potatoes and cooked ham!
Ingredients (for 6-8 roses):
- 1 rectangular roll of puff pastry
- 2 medium potatoes
- 150 g of sliced cooked ham
- 50 g of grated cheese (grana padano or parmigiano)
- 1 egg (for brushing)
- Salt and pepper to taste
- Rosemary or herbs (optional)
Preparation
Wash, peel and cut the potatoes into thin slices (it’s better if you use a mandoline to keep them even). Blanch the potato slices in salted water for 3-4 minutes. Drain them and leave them to cool down on a clean cloth or paper towel. Spread out the roll of puff pastry and cut it into horizontal strips about 5-6 cm wide. Place the potato slices on each strip of puff pastry, overlapping them slightly, along one long side of the strip (leave half the strip free to make it easier to roll up). Add a slice of cooked ham on top of the potatoes (you can break it up so it fits the length of the strip). Sprinkle with a little grated cheese and, if you like, add a pinch of pepper and rosemary. Creating the roses: Fold the free half of the strip of puff pastry over the filling, covering the potatoes. Gently roll up the strip, creating a rose. Place each rose into a muffin mould lightly greased or lined with cupcake cases. Finishing and cooking Brush the roses with the beaten egg for the perfect golden topping. Bake in a preheated oven at 180°C for about 20-25 minutes, or until the roses are nicely golden brown and crispy.
