According to Polish research, potatoes can help with digestive system diseases and have anti-inflammatory properties.
Considered one of the most important and popular crops, potatoes are eaten every day by millions of people all around the world. Not everyone knows that their juice, alongside having a powerful antioxidant effect, similar to other fruit and vegetables, also has anti-cancer properties and can relieve the symptoms of patients with inflammatory intestinal diseases.
But let’s step back. Potato juice is a by-product from starch production; it therefore contains many compounds with a low molecular content but is completely free from any starch and fibre. It is therefore often considered almost exclusively as waste. However, in some cases, it is used as fodder, but once again in this situation, only half of its protein content is recovered.
The research conducted for several years at the Faculty of Food Science and Nutrition of the Poznań University of Life Sciences has proven that this raw material is not only valuable due to its high nutritional value but above all for its bioactivity, which helps with the treatment of certain digestive system diseases and acts as a powerful anti-inflammatory. This new discovery follows in the footsteps of various publications from different international research centres that previously showed its antibacterial, anti-diabetic and anti-hypertensive properties as well as those to support the treatment of obesity (Source: Scienceinpoland.pl).
In traditional medicine, the use of potato juice dates back to the early 19th century, when it was used to relieve the symptoms of gastrointestinal disorders. Nowadays, despite the greater knowledge of the components behind this phenomenon, how it exactly works still remains unknown.
