Ingredients for 4-6 people
Constance variety potatoes, 5 medium
Eggs, 2
Cooked ham, 150 g
Fontina cheese, 150 g
Salt, to taste
Pepper, to taste
Breadcrumbs, as required
Preparation
Having washed and peeled the potatoes, cut them into small pieces and boil them for about 15 minutes. Once cooked, mash them with a potato masher, add the eggs, salt and pepper to taste, a big tablespoon of extra virgin olive oil and then mix well.
On a non-stick baking tray or lined with baking paper, create a base with breadcrumbs and spread out the mixture (about half of the total). Fill it with a layer of cheese and ham, cover with the remaining mixture and sprinkle it with a final layer of breadcrumbs.
Bake in a preheated conventional oven at 200/220°C for about 20-25 minutes until it is golden brown all over. For the best texture, leave the cake to cool down before serving it.
